PINEAPPLE KOMBUCHA & TONIC

Equal parts kombucha and tonic, with a squeeze of citrus: the variations are endless. Q brand tonic water is local and excellent, but it seems to be disappearing from shelves. Suspicious!

Fun fact for food stylists and other casual scientists: quinine, the ingredient in tonic that treats malaria, will fluoresce under UV light.

Goal: a fizzy, fruity, bitter drink without alcohol
Serves: 1

  • 4 ounces pineapple kombucha

  • 4 ounces quality tonic water

  • the juice of 1 key lime or 1/2 NYC lime

 

Combine everything in a glass and serve. Exact measurements are not important. The basic idea is a 1:1 ratio of kombucha and tonic, with lime for a high note.
