For the best flavor, use a “thin” yogurt with lots of tang (like Bulgarian style, or just “plain yogurt”). So-called Greek yogurt as found in the American supermarket makes a lifeless, pasty lassi.

Speaking of life: white sugar is absolutely fine here but if coconut, date, or maple sugar comes knocking, answer the door.

Goal: a pick-me-up for breakfast, dessert or whenever
Yield: 1

  • 1 cup plain yogurt (not Greek)

  • 1 1/2 tablespoons coconut sugar, date sugar, maple sugar, or cane sugar

  • 3/4 teaspoon freshly ground cardamom



 

Add everything to a blender and blast until frothy.
