If you have leftover starfruit from making this week’s starbars, a slice would make an appropriate garnish here. For a Spritzy Collins, omit the gin.

Goal: a 7th dimensional Tom Collins
Yield: 1 drink

  • 2 ounces London Dry gin (like Bombay Sapphire)

  • 1 ounce lemon juice, freshly squeezed

  • 1/2 ounce Black Pepper-Lime Syrup (below)

  • ice

  • Club soda, to top

FOR THE BLACK PEPPER-LIME SYRUP

Bring the following to a brief boil, then let cool to room temp and strain:

  • 1 cup sugar

  • 1 cup water

  • 10 lime leaves

  • 1 tablespoon black peppercorns, roughly cracked in a mortar and pestle

 

Shake the gin, lemon juice and syrup over ice until frothy. Strain into an ice-filled glass and top with club soda.
